Gamer is correct. All that has happened is that Square Enix were commisioned to remake the opening movie from Final Fantasy VII, in order to demonstrate the graphical capabilities of the PS3 at the E3 convention in May. Obviously, it's rendered in real-time on the PS3 hardware with vastly upgraded graphics: hi-res example.
You can view the whole presentation over at gamespot, though it's in a pokey little window and you can't really see how good it is graphically. Is it the sign of a Final Fantasy VII PS3 remake? No-One knows. Tech Demos are frequently released for games and things that never get seen, and Square-Enix have made no announcement either for a full remake or against it. Optimistic people will look to the fact that so many of Square-Enix's forthcoming projects are FFVII spin-offs and that there is a massive fanbase for a remake...

I hope they remake it for the PS3, and I also want them to remake FFVIII, but I know that won't happen. *I am in love with FFVIII, lol* So far, it is just a tech demo, but after the response, they might try to remake it for the PS3, ffvii I mean.

A FFVI remake has been a very popular concept where I've been... I guess that's a far greater undertaking though - a FFVI remake would require a shift from 2D to 3D. Though FFVII is by no means true 3D, it had the feel of a 3D game so it's just a scene by seen transplant and redux. FFVI would require them to rethink every area. Square Enix strike me as too much of a lazy company to remake the SNES era games...
