An anime needs action. It's one of the fundamentals of the anime genre. The more realistic and violent the battles, the better.
I love anime that has strong emphasis on a certain style of fighting as well. Like gun and bar brawls i love, as long as they do it right. Cowboy Bebop is a prime example. Excellent shoot 'em up fights, but not done sloppy.
The best are swond fighting and magic fantasy anime for me though. As long as the battles are done right, like mentioned above.
And then of coarse, who can forget the great mecha battles. If the animation is done well, and the robots are cool, then you can't go wrong.
Another aspect about anime i love is the deep plot, a story line that really takes you out there. Something that no matter how far out, you can still enjoy, and even sometimes relate to. Like Meryl said, it can't be too predictable, and someone like me wants to be suprized in the end, but not left saying, that was a bull sh*t endng.
A good anime has good acting. When the dubbs are done incorrectly, it dies, but when they are done right, then it's like f*cking awesome. Along with the voices, the music has to be able to fit with the series, with very powerfull dramatic moments, and funny, sad, fast, slow, and all the other musical elements that are usually put into anime.
And the charatcer designs have to be good. Drawings that will leave you saying, why can't american cartoons look this good.
