I generally watch and read both types because I:
1) Love shounen stuff, since the action is pretty good.
2) Love shoujo because the romance is cute at times.
3) Love a blend of both because the anime just seems better that way.
The separation between the two types isn't really valuable...it's just there for people who like to know what type they're reading/watching. But, it really doesn't matter because, like you said, there are many guys who watch shoujo and vice-versa and there's nothing wrong with that.
