These movies are pretty bloody and action-filled, especially Vampire Hunter D: Bloodlust and Akira.
For anime series, check out:
Cowboy Bebop (Very good action in here, though some people complain it's boring)
Evangelion (Lot of mecha and action)
Demon Hunter Yoko (Lots of action, deals with sealing demons)
There's a lot more, but right now, I can't think of too many animes with action, blood, and fights. My brain's all warped.
