Well, I can't write to save my life, but I'd say that a unique story that doesn't neccessarily have to involve action all the time, different and interesting enviroments, or sometimes just plain cities are cool too. I dunno, I'm not very good at this, but I do know a few that
doesn't make a good plot: Repetition. Like Sailormoon. The plot is very lame, IMO. Usagi-chan basically goes around and defeats evil dudes, then work her way up to fighting the boss, and next, and new group comes in. That gets very boring after a while. I know some say Cardcaptor Sakura is like that, but what makes this anime's plot different, is the fact the cards have different attributes to them and she has to collect them. Maybe I'm not making any sense, but I just think that's pretty unique. Ahhh.....that's about all I can think of right now.
