I use a 32" Samsung LCD, 1080i. I had my Wii and PS2 on it for a while, but you will only ever get 480p out of either of those, and most PS2 titles don't support that anyway. The Wii will look great (using component cables), but of course switching between PS3 and Wii the Wii will look "blury" in comparison.
In my experience, playing PS2 games on the PS3 look better than just playing them on the PS2 with component cables. This is probably due to the fact that the PS3 upscales and smooths the PS2 game image, and if the game actually supports 480p originally you're laughing.
As for LCD or Plasma, I'm not really sure. I've personally seen no reason to own a Plasma over an LCD and (rumor has it) Plasmas can get screen-burn in, which is more common when playing games. So depending on what you plan on using it for the most would be the big decision swayer (games or movies/tv).
