If you look at the statue used to extract Gaara's Shukaku, there are two eyes which have a dot in them, which would lead you to believe that they are storing the bijuus in that statue. In chapter 266, Deidara admits to Naruto that Akatsuki has already killed two jinchuuriki, hence the two dots in the 9 eyes. With Gaara's Shukaku, that would make three. Chiyo-baa-sama said in an earlier chapter that there are 9 in total, so with the 3 Akatsuki has + Naruto's kyuubi, that means there are 5 other bijuu left in the world of Naruto. Whether they are all sealed within jinchuuriki or just roaming the planet a la Kyuubi before the 4th sealed him in Naruto, is still unknown.
Also, it would seem that Akatsuki is collecting the bijuu to make themselves jinchuuriki, hence nine members of Akatsuki and one bijuu for each member. But, why store them in that statue? Perhaps they are waiting until they have all nine before sealing them inside themselves so that a member doesn't leave while they are still getting the jinchuuriki? Or maybe they want to collect all nine and summon all-powerful from that statue, like a super-bijuu or something. I suppose we'll find out when more members are revealed, but until then, we can safely say that none of the members are currently a jinchuuriki. And you can look up Japanese mythology to find out what all the other bijuu are, which is where Kisimoto got the idea for them.
