Hmm...no specific order:
1) Fruits Basket
2) The Big O (First season, second season really was a disappointment  )
3) Rurouni Kenshin (the TV and OVAs...last one was just so sad though)
4) Hellsing
5) Cowboy Bebop
This was difficult...there's so much to choose from.
