What are the best anime opening and ending themes/songs?

What kind of opening and ending themes do you prefer? Instrumental or are lyrics ok for you? If you have a fave that has lyrics, you can post them as well :)

Speaking of opening themes the best by far is Gankutsuou's We Were Lovers. The author of this great song is Jean-Jacques Burnel, formerly Strangler's bassist/vocalist (for those who don't know, the Stranglers are a 70s-80s British band, but I think they are still "active"...?). Well, Gankutsuou's soundtrack is substantially Burnel's work. The opening in particular is a gem. Anyway, the whole opening credits sequence is really beautiful, it's worth the whole show IMO.

As for ending theme I am less sure, you caught me in a blank moment... I have to think more about it before picking some title :heh:
